Lemon Curd

Homemade lemon curd is one those taste memories that will stay with you for many years. There's nothing quite like it. The mixture of sourness, slightly sweet notes and balanced with a smallest amount of salt is amazing but what is incredible is that you can make this at home in less than 10 minutes. All you need is a double broiler. I use a metal bowl on top of a small pot. Nothing fancy.

Lemon Curd 

Ingredients:

1/4 cup Lemon Juice (fresh or concentrate)

4 Egg Yolks

1/2 cup of Sugar

1 tsp Salt

3 tbsp Butter (softened)

 

How to: 

  1. Set up your double broiler. Boil a shallow amount of water in a pot and place a bowl on top of the bot. Water should not be touching the bottom of the bowl. 
  2. Combine lemon juice, yolks, salt, and sugar in the bowl. Whisk until incorporated. Continue whisking as the curd thickens. 
  3. Once the curd starts to coat the sides of the bowl, add the butter and whisk until melted. Take the curd off the heat and transfer into a heat proof bowl. 
  4. Cover with plastic wrap (touching the curd) and cool before using. Enjoy!
