Sky High Buttermilk Biscuits
Ingredients:
3 1/2 cup AP Flour
2 sticks of cold Salted Butter (sliced into small chunks)
2 tbsp Granulated Sugar
2 1/2 tsp Baking Powder
1/2 tsp Baking Soda
1 Cup Buttermilk
How to:
- Preheat the oven to 425 degrees F.
- Combine flour, sugar, baking powder, baking soda, in a bowl. Use your hands or a pastry cutter to work the butter into the mixture until it forms a coarse texture with small chunks of butter still intact.
- Drizzle the buttermilk and mix until a shaggy dough forms. Knead sparingly.
- Pat dough into a square about 2 inches thick. Use a knife to slice dough into 4 squares. Place squares on top of each other and flatten the dough once again into a 2 inch thick rectangle. Slice into 8 portions.
- Place portions on a parchment paper lined cooking sheet. Brush melted butter on top of the biscuits and sprinkle with coarse sugar if desired.
- Place sheet in the oven and immediately lower the temperature to 400 degrees F.
- Bake for 20-25 minutes or until tops are light golden brown. Enjoy!
