Sky High Buttermilk Biscuits

Ingredients:

3 1/2 cup AP Flour

2 sticks of cold Salted Butter (sliced into small chunks)

2 tbsp Granulated Sugar

2 1/2 tsp Baking Powder

1/2 tsp Baking Soda

1 Cup Buttermilk

How to:

    1. Preheat the oven to 425 degrees F.
    2. Combine flour, sugar, baking powder, baking soda, in a bowl. Use your hands or a pastry cutter to work the butter into the mixture until it forms a coarse texture with small chunks of butter still intact.
    3. Drizzle the buttermilk and mix until a shaggy dough forms. Knead sparingly.
    4. Pat dough into a square about 2 inches thick. Use a knife to slice dough into 4 squares. Place squares on top of each other and flatten the dough once again into a 2 inch thick rectangle. Slice into 8 portions.
    5. Place portions on a parchment paper lined cooking sheet. Brush melted butter on top of the biscuits and sprinkle with coarse sugar if desired.
    6. Place sheet in the oven and immediately lower the temperature to 400 degrees F.
    7. Bake for 20-25 minutes or until tops are light golden brown. Enjoy!
